Quinoa Breakfast Bowl

Quinoa for breakfast?  I must be joking right?  I tried this recently and have to say I was pleasantly surprised with how well it actually tasted.

Ready: Overnight 

Serves:

I was making a Quinoa salad, when I realised that I had cooked too much and had about 150g left over.  I wasn’t sure what to do with it, I didn’t want to chuck it away but I’d already prepped all my meals. So I decided to add it to my morning smoothie.  I figured if you could make overnight oats why not overnight quinoa?

Ingredients: 

  • 50g Quinoa (uncooked) 
  • 80g Frozen Berries 
  • 1 Banana 
  • 50g Greek Yoghurt 
  • Splash of water (optional) 
  • 1 tbs Dessicated Coconut (optional)
  • Sprinkle of Cacao Nibs (optional)

Method: 

  1. Cook the Quinoa as per the packet instructions 
  2. Blend the frozen berries, banana and yoghurt together.  Add a splash of water to reach your desired consistency. 
  3. Stir the quinoa into the smoothie.  
  4. Top with the cacao nibs and coconut (if using)

I have to say that I wasn’t really expecting this to be nice at all, but I was pleasantly surprised at the result.  When I added my quinoa to my smoothie, it didn’t impact the flavour at all, but gave it a fantastic texture, similar to rice pudding.  It was so nice that my partner tried to steal it, so I had to give him a clip around the ear hole. So I decided to share the recipe with you guys.  

The Health Benefits

Quinoa is a fantastic source of fibre, and can contain almost double the amount when compared to other grains.  It is also rich in proteins, and a good source of carbohydate. As we know, carbohydrates provide us with energy, while protein is needed for healthy bones, manufacture of DNA and hormones. 

Berries are a great source of vitamin C, which acts as an antioxidant.  They also contain a good amount of fibre and benefit from being low in calories. Bananas contain potassium, which aids in the regulation of our fluid levels, magnesium, which is good for our muscle health (especially our heart) and calcium, which helps keep our bones healthy. 

So with all of these health benefits why not give this breakfast a try? 

Tip

Cook the quinoa the night before and leave in the fridge until morning so that it’s cool.
